Life was much easier when I could just grab myself a lean cuisine and not have to worry about anyone complaining about what I was cooking for supper. Fast forward a couple years and I'm in charge of pleasing two other people and trying to eat healthy. For the first year or so of living together pasta became my best friend. Give me a box of noodles and some sauce and there was supper. If I was feeling nice I'd even throw in some chicken and voila, chicken parm! Sundays even became "spaghetti sunday" mainly because everyone was here watching football and a box of spaghetti only costs $1.00. Apparently pasta only goes so far, everyone here is sick of it, except for kiddo who would eat a steady diet of spaghetti if she were allowed.
So now i've been forced to look up recipies, shop for actual ingredients, and prepare meals that require more than just a boiling pot of water. Is it sad that we didn't even have pepper when I was checking to see what we would need for supper tonight? Tonight I will attempt to make "crispy cheddar chicken", a recipe I found on pinterest! Not to worry though, i'll be serving it with a side of instant mashed potatoes! I haven't completely changed!
